The history of the wines of Champagne dates back to Roman times, where the Champagne’s region was best known for wines (not sparkling) from the town of Aÿ. The wines of Champagne were then, for a very long time, stored in barrels. However, at the end of winter, the fermentation of wine was stopped by the cold and started again with the warmer weather of spring.
